Hummus
 
Ingredients:
2 1/2 cup canned (1 cup dry) garbanzo beans - rinsed and drained
1 bay leaf
5 cup vegetable stock
1/4 cup lemon juice
6 garlic cloves (oven roasted) and one chopped
Zest of 1 lemon
1/2 teaspoon cayenne
1/2 cup parsley
 
Directions:
Boil beans, bayleaf and vegetable stock in 2-3 quart pot. Simmer until tender (2 1/2 hours). When done, drain beans and save liquid.
Purea beans and add lemon juice (add stock liquid if want cremier). Add other ingredients and mix well.
Salt to taste.
