| Hummus |
| Ingredients: |
| 2 1/2 cup canned (1 cup dry) garbanzo beans - rinsed and drained |
| 1 bay leaf |
| 5 cup vegetable stock |
| 1/4 cup lemon juice |
| 6 garlic cloves (oven roasted) and one chopped |
| Zest of 1 lemon |
| 1/2 teaspoon cayenne |
| 1/2 cup parsley |
| Directions: |
| Boil beans, bayleaf and vegetable stock in 2-3 quart pot. Simmer until tender (2 1/2 hours). When done, drain beans and save liquid. |
| Purea beans and add lemon juice (add stock liquid if want cremier). Add other ingredients and mix well. |
| Salt to taste. |
