Con Queso
1 Pound American Cheese
2 Tablespoons Onion (finely chopped)
4 Teaspoons Green Pepper (finely chopped)
2-3 Tablespoons Canned Tomatoes (chopped)
1 Tablespoon Spice Mix (see seperate recipe)
In a double boiler melt 1 lb. American Cheese (preferable Land O' Lake yellow) with 1 cup of water.
As cheese is melting add 2 tablespoons finely chopped onion, 4 teaspoons finely chopped green pepper, 2-3 tablespoons strained (chopped) canned tomatoes, and 1 tablespoon of mixed spices.
Additional water may be required as cheese melts.
