Dijon Mustard Sauce
1 finely diced shallot
1 cup white wine
1 tablespoon dijon mustard
2 cups heavy cream
salt and pepper to taste
Bring shallot, mustard and wine to a boil; reduce liquid by 1/2. Add cream and reduce until thickened (whisk to keep from burning). Add salt and pepper to taste.
